Two Award-Winning Chefs in the News

Two chefs are making the news this week, Head Chef Jenny Flynn of Faithlegg and Chef Dominique Majecki of the g Hotel. Faithlegg won the Food & Beverage Award at the Waterford Business Awards. Chef Majecki joins the five-star g Hotel & Spa in Galway as Head Chef. 

Chefs in the News 

Faithlegg is home to the Roseville Rooms Restaurant; a 2 AA Rosette holder and a proud member of Good Food Ireland. The Red Cedar Lounge and the newest addition to the hotel – Bar 1783 are part of the Faithlegg culinary offering. The Waterford Business Awards, which are organised by Waterford Chamber, Dungarvan & West Waterford Chamber and WLR, celebrated the successes and contributions of the shortlisted companies.

Opening proceedings, An Taoiseach Michéal Martin, congratulated all those nominated by saying: “I believe it more important than ever, that we take time to acknowledge the resilience, determination and hard work and of course the success of so many in our business community and I am glad to have this opportunity to do this with you today.”  

Showcasing a Taste of Waterford

Working with Jenny there is a dedicated team in the Faithlegg kitchen showcasing a taste of Waterford across the hotel’s restaurants, bar and event dining. The culinary team use seasonal vegetables from local farms and partner with artisan producers in the region.

Head Chef Jenny Flynn commented on the award; “I along with the culinary team are delighted to have been recognised in such an important category at the Waterford Business Awards.

New Head Chef for the g Hotel

Over in the west the five-star g Hotel & Spa has announced the appointment of Dominique Majecki as Head Chef. Hailing from Laval in the Pays de la Loire region of north west France, Dominique will bring his vast experience to the hotel. He joins from Glenlo Abbey where he was Executive Head Chef since 2018.  

Dominique’s interest in cooking began at an early age taking his cue from his grand uncle, a baker. He completed his training at the Notre Dame de la Miséricorde with work experience in two Michelin starred restaurants in France.  

Following his training Dominique travelled to Ireland where he applied traditional French ideals to Irish cuisine. Working on the west coast and in Dublin’s Lock’s Restaurant, before embarking on a round-the-world trip.

Award Winning Chef Majecki

Returning to Galway in 2007, Dominique worked as a sous chef in the Ardilaun Hotel. He then joined the team at the Lodge at Ashford Castle in 2015. In 2018 he arrived at Glenlo Abbey & Estate as Executive Head Chef. During this time he oversaw the renovation of the kitchens, created menus for Palmer’s Bar & Kitchen and achieved the 2 AA rosette standard in the well-known Pullman Restaurant.
