Waterford City is a place of firsts for food and drink! The bacon rasher was invented in Waterford, so was the cream cracker. And the port was first to import teas, wines and spices into Ireland.
It’s this melting pot of cultural and heritage connections, intertwined with Vikings and Huguenots, that has made Waterford today an exciting culinary destination.
Your tour guide Stíofán Mac Cárthaigh of StepsBackThruTime will take you on a walking tour to well-known spots, along with streets hidden with fascinating historical facts, like where coffee was first traded in Ireland. He’ll show you too how the modern cuisine of Waterford looks, and tastes, today.
There are three stops during the tour including The Reg in the Viking Triangle by Reginald’s Tower. Here you’ll get to taste blaas from Walsh’s Bakehouse – a soft white bun – and see the 900-year-old medieval city wall that runs through the spine of the bar.
Guests then experience the amazing creations of head chef and owner of Mara Restaurant – Luis Martin. With a stint in a 3-star Michelin venture in Spain, he’ll create a local and seasonal starter that embraces innovation, sustainability and flavours.
The final stop is the award-winning Momo Restaurant and the charismatic owner Kamila Bystrzonowska. She and her head chef will present the main course, and with it, a fascinating talk on why Waterford is a standout area for food and drink producers – many of which she uses on her menu.
