Fitzpatrick Castle Hotel, Killiney – Celebrates 50 Years of Welcomes

Fitzpatrick Castle Hotel in Killiney, Co. Dublin has been a favourite with visitors and locals since it came under the ownership of the Fitzpatrick family, 50 years ago. The Castle was headed by the legendary hotelier Paddy Fitzpatrick. It is now owned and operated by his daughter Eithne Fitzpatrick and her son Mark Scott Lennon; three generations of the family have been at the helm. The stunning location on Killiney Hill overlooking Dalkey Bay is one of the best in Dublin.

In its golden jubilee year and with Covid-19 rampant, the hotel has not been sitting on its laurels. Instead, it has been innovating, creating and facing the challenges that have been hitting the hospitality industry hard.

During Covid-19 the family-owned hotel remained open and took the opportunity to create some new spaces for guests. These include The Terrace at the Castle offering homemade cakes and snacks as well as the famous Castle Burger. The Castle also opened a drive-through coffee option for busy people.

New Chef for Mapas Restaurant

Executive chef Paul Hickey joined Mapas Restaurant and he has designed a new menu with the best or Irish and locally sourced seasonal produce. Eithne Fitzpatrick, with her flair for design, gave the Cocktail Bar a makeover.

Mark Scott Lennon said “the team at Fitzpatrick Castle Hotel really appreciates the ongoing support shown by guests who stay with us on a regular basis for business or leisure and of course, those who visit for the first time. I am particularly proud of our Green Team where we take part in Clean the World programme among other sustainable actions.”

This year, the limited-edition cocktail to celebrate the 50th anniversary, was created by mixologist Marius, of the Library Cocktail Bar. It contains Hennessy Brandy, Grand Mariner, Tonka Bean and fresh egg whites served with Prosecco and a golden sprayed meringue on the side. Guests to the hotel this year have been invited to sign the 50th birthday card.

The team at the Castle have also marked the 50th by redesigning the logo, paying tribute to its past while also looking forward to a new contemporary look. travel2ireland congratulates Fitzpatrick Castle Hotel and wishes the team the very best for the next 50 years.
